This vegan recipe has impresed everyone because it is very tasty and delicious. I didn't eaten before such a delicious vegan recipe full of protein. I hope you will try this delicious eggplant chickpea stew recipe. And if you don't have a lot of time to boil the chickpea you can use canned chickpea too.
INGREDIENTS:
For the chickpea
- 1/2 tsp baking soda
- 1 litre of water
- 250 g chickpea
Soak the chickpea in the water for 8-10 hours!
- 1- 2 litre of water
- 1 onion
- 1 Laurel leaf
- The soaked chickpea
Simmer for about 50 minutes- The chickpea has to be tender!
For the eggplants:
1 kg of eggplants
-1 litre of water
- 1 tsp salt
Soak the eggplants in the salted water for about 10 minutes!
- 20 g of olive oil
Bake the eggplants - grill function for 5 minutes!
For the tomato sauce:
-20 ml olive oil
- 1 chopped onion
- clove of garlic
- 500 ml tomato juice
- allspice
- salt and pepper
