The base recipe for most of the ice cream I make:
1 3/4 cup milk
1 3/4 cup heavy cream
1/2 cup sugar
1/4 tsp xanthan gum
Heat the milk until warm. Combine the xanthan gum into the sugar and slowly whisk the mixture into the milk. Add the cream. Refrigerate. The gum may separate a bit and form a goopy foam, just whisk it up again.
