Admittedly, it's nice to have a super delicate cutting edge. But for a knife to cut well, you have to master the basic stones. If the knife already doesn't cut well from, let's say 400 grit, it won't cut better at 5k.
The technique is super important, hence this video to demonstrate that even on an Atoma 140 plate, the cut remains silky and that the deburring has been done well. Sharpening a knife is full of small details that you have to learn to recognize and master!
