Delicious Canadiana from rural Quebec.
Recipe for TWO pies (they freeze well)
Ingredients
2 1/2 lbs ground pork
1.5 onions, diced
1.5 cloves garlic, minced
2.5 tbsp chopped parsley
1/2 tbsp savory
1/2 tsp cinnamon
1/2 tsp cloves
Salt & pepper to taste
Water
1 - Egg
Preparation
Combine all ingredients with Ground Pork (except water and pastry).
In a large Dutch Oven add the Meat Mixture and cover with water, and bring to a boil.
Reduce heat and simmer for 2 hours until mixture is moist but not runny.
Cool the meat mixture thoroughly in the refrigerator.
Roll out a sheet of pastry into a pie plate and fill with cooled meat.
Add another pastry sheet to top and seal edges.
Egg wash the exposed pastry adding vent slits on top.
Bake at 350F until golden brown.
Let stand ten minutes then cut and serve.
Recommend Heinz 57 Sauce to compliment the pie.
