First, securing the Twins themselves is inherently advantageous. You see, the Twins are the only major crossing for a long ways, and by having it secured, Robb essentially leaves Taiwin stuck on the eastern side along the Green Fork unless he were to retreat further south.

Additionally, House Fray has thousands of men at their disposal, who he can put to use in his own army, but also serve as a major threat to his rear if he should keep marching without them. Those men also were convenient because they provided cover and made it look like Robb hadn’t actually split his forces, and with the Twins being secured as well, that’s one less place where word of the split can get out from.
But also, Robb did specifically try, but you need to keep in mind a few things:
The Westerosi are not Romans. They don’t have trained legions who are good at building makeshift bridges and forts whenever needed, they’re a bunch of conscripted peasants mixed in with some nobles, trained men at arms, and freeriders.
The Green Fork is a rather large river, and also flooded around this time.
The Twins are actually built at a place where the River is at it’s narrowest for a long time.
Building a bridge like that would take time, and also likely require Robb to expend men that he doesn’t have the ability to waste just holding it when they don’t have any good defensive fortifications.
There just weren’t any good places to make their own crossing.
Obviously, GRRM put quite a bit of work into the reasoning as to why House Fray is pretty much the only option here.
When Robb reached the Twins, he had an army of 20,000 soldiers and thousands of wagons, carrying food, equipment, tents, supplies, etc.
His preferred choice was for Lord Fray to (a) open the gates and allow Robb to cross the bridge, and (b) join his army to Robb’s.
His mother volunteered to act as Robb’s representative. She negotiated a deal, on Robb’s behalf, pursuant to which Robb and Arya would both marry Frays. In exchange, Wwalder Fray allowed Robb passage and gave Robb his full support.
Robb didn’t accept just to cross. He also accepted because Wwalder Fray was giving Robb thousands of soldiers including a thousand knights.
But assuming Wwalder Fray categorically refused to get involved in any way.
In that case, Robb would probably have just marched south and engage Tawin Lannister.
