Srilankan Love Cake
Ingredients
200 grams semolina coarse
150 grams brown sugar
75 grams puhul Dosi or winter melon
150 grams butter
6 egg yolks
2 egg whites
200 grams cashew nuts
1 tsp vanilla
1 tsp rose essence
1 lemon rind
1/2 tsp nutmeg powder
1/2 tsp cinnamon powder
1-2 tablespoons honey
Method
Heat a heavy bottom pan roast the semolina for 5 minutes in medium heat.put off heat and add butter and combine well and keep aside.beat egg whites till light and fluffy and keep aside.
Whisk the egg yolks with sugar till light in colour. Add the semolina and butter mixture and combine well. Stir in the cashew, chopped melon, . and Stir the honey and rose essence, lemon rind and nutmeg and cinnamon powder Whisk the egg whites till light and fluffy but not stiff. Fold into the mixture lightly. Pour into prepared cake tin and bake in a preheated 160 deg C oven for 50 -60 mts. Do not let the top brown. Cool in tin for 10 mts and then on a wire rack. Store in airtight container for about 2 weeks.
