Methi Matar Malai Recipe | मैथी मटर मलाई | Methi Mutter Malai | Happiness on Plate
Methi Matar Malai is a mild and creamy north Indian curry recipe made with fenugreek leaves, peas, and cream. it is known for its combination of mildly sweet, spicy, and mild bitterness taste in each serving. it is ideally served with a choice of Indian flat bread like roti, and chapati but can also be served with a combination of garlic naan and jeera rice.
Ingredients-
For Onion Paste:-
1 tbsp Oil
1-inch Cinnamon stick
4 Cloves
4 Black peppercorns
2 Green cardamoms
1 inch Ginger chopped
2-3 Cloves Garlic chopped
2 Green chilies chopped
2 small or 2 cups Red onion chopped
Salt to taste
¼ cup Cashew nuts
For Curry:-
2 cups Fenugreek leaves (methi leaves) plucked the leaves, measured, and then washed
1.5 cups Green peas Frozen
2 tbsp Ghee
1 tsp Cumin seeds
1 cup Water
1 teaspoon Garam masala
½ cup Heavy whipping cream or fresh cream or malai
Method-
Making Onion Paste:-
➡️Heat 1 tablespoon of oil in a pan on medium heat. Once hot add whole spices and saute for 30-40 seconds.
➡️Then add ginger, garlic, and green chilies. Saute for a minute or until the raw smell of ginger garlic goes away.
➡️Add chopped onion and add a little salt to speed up the cooking process. Mix and cook until the onion is soft and translucent or light pink in color.
➡️Add cashew nuts and mix.
➡️Once this onion mixture cools down slightly, take it into the blender. Add little water to make the grinding process easy. Make it into a smooth paste.
Making Methi Matar Malai:-
➡️Heat the remaining 2 tablespoons of oil in the same pan on medium heat. Once hot add cumin seeds and let them sizzle a bit.
➡️Then add prepared onion paste and cook until it thickens. It may take around 3-4 minutes.
➡️Then add chopped methi leaves. Mix and cook for 2 minutes. If the paste is sticking to the bottom of the pan then add a splash of water and mix.
➡️Add cooked green peas. Mix well and cook for a minute.
➡️Add water, and remaining salt and stir to combine. Simmer for 5 minutes. Do stir once or twice in between.
➡️Add garam masala and mix.
➡️Lastly, add heavy cream and mix. Bring the gravy to a boil and then turn off the stove.
