Ingredients:
݀▪️ 14 oz coconut cream
݀▪️ 2 cups glutinous sticky rice
݀▪️ 13.5 oz full-fat coconut milk
▪️ 1 cup coconut sugar
▪️ 1 tsp vanilla or pandan extract
▪️ Pinch of kosher salt
▪️ Banana leaves
Instructions:
▪️ Coconut Curds: Simmer coconut cream in skillet until curds brown (~30 mins). Strain and set aside.
▪️ Prep Leaves: Heat banana leaves, then grease with coconut oil.
▪️ Cook Rice: Rinse rice until clear. Cook with water until tender (~18 mins).
▪️ Caramel Sauce: Boil coconut milk, sugar, extract, and salt to make caramel (~10 mins).
▪️ Combine: Mix rice with most caramel, cook until absorbed. Spread in greased pan, top with remaining caramel.
▪️ Bake: At 375°F until bubbly (~20 mins).
▪️ Serve: Cool, top with curds. Enjoy!
