In this video Sephra demonstrates how to melt their Premium Milk chocolate in a double boiler. This is a couverture chocolate that has been designed with at least 39% cocoa butter so that it will flow through chocolate fountains without the addition of oil. The easiest, quickest and cleanest way to melt your chocolate is still in the microwave (instructions are on the back of each bag), but for those of you interested in using a double boiler - here you go:

115°F/46°C - The ideal water bath temperature
132°F/55°C - Chocolate begins to scorch
212°F/100°C - Water boils
1:20 - You should have a Candy thermometer to set the temp of your warm water bath
1:35 - We are using Sephra Premium Milk chocolate
2:18 - Pouring chocolate in the pot to begin melting
2:26 - Chocolate pot is nested in the warm water bath and we stir as it begins to melt.
2:45 - After about 5 minutes on the double boiler the chocolate is melted and ready for user in a chocolate fountain
