Today we're making Thai Lad Na. It's noodle with gravy sauce and also make fresh rice noodle as well. If you love fresh rice noodle you will love this dish.
Ingredients
1 cup rice flour
1 cup tapioca flour
2 cups water
cooking oil
To marinate chicken
1 cup chicken breast
1 tsp soy sauce
1 tsp oyster sauce
1/4 tsp of sugar
1 egg
A little of olive oil
A pinch of salt
A pinch of white pepper
To make lard na sauce
2 tbsp oyster sauce
1 + 1/2 tbsp sugar
1 tbsp soy sauce
2 cups pork broth
2 cloves of garlic
4 pieces of shrimp (as needed)
1 cup snap peas
1 cup baby corn
1 cup carrot
1 cup straw mushroom
2 1/2 tbsp cornsarch + 3 tbsp of water (mix it up)
How to make pork broth
2 lb pork bones or choice of meat you like
5 liters of water
2 tbsp white peppercorn
1 big of sweet onion ( cut in four chunks)
4 pieces of chinese radish( substitute 4 chunks of cabbage)
1-2 pieces of lemongrass
2 pieces of whole garlic
2-3 pieces of coriander roots( substitute its stem)
2 tbsp of rock sugar ( substitute white sugar)
2 tbsp of palm sugar
2 tbsp mushroom soy sauce ( heathy boy brand) or any soy sauce you have on hand
3 tbsp oyster sauce
2 tbsp salt
Instructions
1. You need some water in a pot, add 1/4 tsp of salt and 1 tbsp of vinegar, then turn to high heat, bring it to a boil. While you're waiting for the water get hot, wash and drain your meat( I got 2 lb of pork bones and pork spare rib mix together). Then add the meat into the pot of hot water, cook at high heat for 7 minutes.
2. After 7 minutes, remove the pot from the heat to filter and wash the meat again, then add 5 liters of water into the same pot, put the meat in, place the pot on the heat then cook at high heat.
3. You need a pan, add a tablespoon of cooking oil, white peppercorn, lemongrass( skip it if you don't have it), whole garlic, coriander roots( substitute its stem), sweet onion then toast them together on low - medium heat until you get aroma.
4. Add Chinese radish( substitute cabbage), rock sugar ( substitute white sugar), palm sugar, mushroom soy sauce ( heathy boy brand) or any soy sauce you have on hand, oyster sauce, salt and all of herbs you already toasted put into the pot, once the water is boiled turn to medium heat cook for an hour ( if you want to get a super tender pork, cook at low heat about 3-4 hours). While it's cooking, always remove the bubble on top of surface of the soup.
5. Once an hour is up, filter it with a strainer, let it cool down so you can keep it in refrige for 3 days but keep it infreezer for very long time.
