You'll need 1 cup of chopped onion, 1/2 cup of fennel, 3 cloves of garlic, minced, 4 cups of fresh asparagus, 2 1/2 cups of zucchini, 1 cup Roma tomatoes, and 2 tablespoons of fresh basil. Add 2 tablespoons of olive oil to a 4-quart Dutch oven, adding the onion, fennel, and garlic once the oil is hot. Caramelize this mixture, stirring in three 14 1/2 ounce cans of vegetable or chicken broth and bringing the soup base to a boil. Simmer (covered) on low for 5 minutes, stirring in the asparagus, zucchini, and tomatoes. Boil and reduce again, simmering the vegetable soup until the zucchini is tender.
