Being a mom of 2 under 2, it is hard to get a healthy delicious meal on the table every night. That is why I love adding these simple meals to my rotation.
This recipe is for a family favorite, Summer Orzo Pasta Salad with Lemon, Tomato, and Asparagus.
Ingredients:
1 box of Orzo
Fresh asparagus, cut into 1 inch pieces
1 pint grape or cherry tomatoes, halved
1 lemon zested and juiced
4TB EVOO
1 clove minced garlic (I never measure lol)
Kosher Salt and Ground Pepper to taste
Grated parmesan
