Shred tofu and carrots. Chop green onions and mushrooms Add all veggies to a large bowl. Grate a thumb-size piece of ginger. Add a garlic clove, sesame oil and soy sauce. Mix everything well together and fry in a pan for a few minutes. Fill a bowl with lukewarm water and soak the rice paper one by one in the bowl. Fill the rice paper with a tablespoon of the filling and fold the corners over to form a small parcel. Take a second piece of rice paper and wrap it around it. Fry the dumplings in a pan with a little oil until they are golden brown on both sides. For the sauce, mix two parts soy sauce and one part sesame oil together.
