*For cooking
Beetroot, grated- 2 medium-sized beets
Turmeric powder- 1/4 tsp
Salt- 1 tsp
Water- 1/2 cup
Yogurt- 1/2 cup
Curry leaves- 5 leaves
*To grind
Coconut, grated- 1/2 cup
Ginger- 1-inch slice
Green chili- 1 or 2
Cumin seeds- 1/2 tsp
Water- 1/4 cup
*For Tempering
Coconut oil- 1 tbsp
Mustard seeds- 1 tsp
Dried red chilies- 2
Curry leaves- 1 sprig
👇Preparation
Grate the beetroot.
Add it to a clay pan or non-stick pan, add turmeric powder, salt & water.
Cook covered till the beetroot turns soft.
Add curry leaves.
To a blender jar, add all the ‘to grind’ ingredients.
Grind to a smooth paste.
Add the ground coconut paste to the cooked beetroot, combine well.
Cook for a few minutes till the raw smell of coconut goes away.
In a bowl, take the yogurt & combine well using a spoon.
Lower the heat & add the yogurt to the beetroot, combine well, cook for a minute.
Keep it covered.
Place a small pan over medium heat.
Add coconut oil, let turn hot.
Add mustard seeds, let splutter.
Add red chilies & curry leaves.
Pour the tempering over the beetroot pulissery & keep it covered for sometime.
Enjoy with rice.
