Here are the first two vegetarian backpacking meals I tried:
🥑GOOD TO-GO Mexican Quinoa Bowl - 2 Servings
⭐️/⭐️⭐️⭐️⭐️⭐️
I was really looking forward to this but it was so unappetizing, I could only take a few bites.
I’m not a big fan of mole and found the flavor to be overpowering. Even my husband (who likes mole) did not like this meal.
If I had tortillas and avocado, it would have been 100x better.
🍋 Wild Zora Baja Citrus Quinoa Bowl - 1 Serving
⭐️⭐️⭐️/⭐️⭐️⭐️⭐️⭐️
I liked the flavor of this much more than the first meal!
It was light and the citrus and cilantro were refreshing. And I loved the added olive oil packet!
Just don’t be like me and add too much water… or you’ll have a quinoa soup 🙃
The biggest downside to this meal is it’s only 1 serving, which isn’t a ton of food.
