Ingredients
► Lemon Cake Batter
• 250g Flour
• 1/3 tsp baking soda
• 2g salt
• 150g milk
• 10ml white vinegar
• 4g lemon zest
• 20ml lemon juice
• 150g butter
• 250g sugar
• 2 eggs
► Lemon Syrup
• 20ml Water
• 20ml Lemon Juice
• 20g Sugar
► Lemon Glaze
• 100g powdered sugar
• 25ml lemon juice
The instructions
◇Step 1 - Lemon Butter Cake Batter
1. Zest and juice your lemons and set aside
2. In a bowl, mix the vinegar and the milk and set aside
3. In a big bowl, cream the butter, sugar and lemon zest
4. Add the eggs one at a time
5. In another bowl, mix the four, salt and baking soda
6. Add the flour mix to the butter mix in 3 times
7. Alternating with the milk
8. Add the lemon juice with your last addition of the milk
9. And as usual, finish with the flour mix
10. You now should have a thick and homogeneous lemon butter cake batter
11. Grease and line with parchment paper a loaf pan
12. Pour all of your batter in
13. Flatten it up
14. Bake at 350F for about 60-70minutes
15. Take out of the oven
◇Step 2 - Lemon Syrup
1. In a saucepan, bring the water, sugar and lemon juice to boil
2. Immediately take off the heat
3. Brush your cake that is freshly out of the oven with the syrup
4. Don’t forget the sides
5. Let it absorb the syrup and brush again
6. Use all of the syrup
◇Step 3 - Lemon glaze
1. Whisk the powdered sugar and lemon juice together
2. Adjust the quantities to get a really thick glaze
3. Drizzle the glaze on your room temperature cake
4. Cut a lovely piece and enjoy!
