Aunt Jo's Cake:

2c Sugar

4 Eggs

2c Flour

3/4c Oil

2c Grated Carrots

1 tsp vanilla

1 tsp Cinnamon

1/2 tsp Nutmeg

1 1/2 tsp Baking Powder

1/2 Tsp Baking Soda

1/2 tsp Salt

Optional:

1/4 tsp Walnut Extract

1c Chopped Walnuts



Cream Cheese Frosting:



8c Powdered Sugar

16oz Softened Cream Cheese

1c Softened Butter

1 Tbsp Vanilla

2-3 Tbsp Heavy Whipping Cream
