Hey everyone! We're back in action here on Crazy Delicious Cooking and are so glad to be cooking with all of you once again! It's berry season and we took our annual trip to The Happy Berry farm to pick fresh blueberries for the recipe we are bringing you today. In this episode, we're making Lemon Blueberry Cream Cheese Danishes. We posted a photo of these on our social media accounts at the beginning of the week and had so many questions about how to make them. So we ran into the kitchen to film this episode for all of you!
First, let's talk about our time picking berries at The Happy Berry. The Happy Berry is a small, family-owned U-pick farm with blackberries, blueberries, muscadines, grapes and figs. They also offer pre-picked berries on the farm but hey, if you're going to go, you might as well enjoy the outdoors! Upon arriving at the farm you drive down the dirt road and past rows and rows of blueberry bushes. An old tenant house is used as the headquarters for the farm and has been around since the mid 1800's. It has since been rebuilt several times and this is where farm equipment is stored and berry sales take place on the front porch. While you're there be sure to say "Hi" to Walker, the owner. We went on a sunny and hot day so sunscreen was definitely needed - after all, there isn't much shade from blueberry bushes! As you return from picking and you feel guilty from eating all those berries straight off the bush, you can contribute to the Sin Bucket to atone for your sins. According to their website, The Happy Berry actually encourages "grazing" while picking as there is no better way to learn what a ripe berry is. The quality of fresh picked berries is amazing compared to what you will buy in the grocery store. These berries lasted TWO weeks without going bad. (Blueberries from the supermarket go bad in just a few days!) Right now, it's so important to support local businesses, including farms, especially when you know the produce is tasty and fresh!
So after we picked all those berries, we headed home to the kitchen. The Lemon Blueberry Cream Cheese Danishes were quick to whip up and took us about 30 minutes total to make. They are perfect for breakfast, brunch or even as a snack. Be careful though because don't say we didn't warn you, they are CRAZY DELICIOUS! We ate our danishes in less than 5 minutes and you will too!
