While visiting San Sebastian, Elena Arzak took me to a local market where they buy the produce for their eponymous three-Michelin-starred Arzak restaurant, and shows me the difference between hake and cod kokotxa (the fleshy underpart of a fish's jaw which is a delicacy in Basque country). She discloses which ones she prefers in the end! :)
