If you are having a vegetarian friend over for dinner at your home and you don't know what to make, as you are not used to making vegetarian meals for yourself, this easy eggplant gratin recipe is what is going to save your day. It doesn't take much time and it is foolproof.

Grocery list:
- one eggplant
- a 170g can of Princes plant-based tuna with vegetables in spicy sauce (if you are not living in the Netherlands and you cannot find this at your supermarket, you can replace this with plant-based tuna in tomato sauce)
- grated cheese (use vegan cheese, if you want to make the dish vegan)
- Italian herbs
