To me, meatloaf is the epitome of comfort food... Which is why this is one of my favorite recipes! Pair a slice of this with some creamy, garlic mashed potatoes and sautéed green beans and you’ve got THE perfect meal.
INGREDIENTS:
1lb of ground beef (80/20)
1lb of ground pork
1/2 cup of Bread crumbs
2 eggs, beaten
1 tsp of Ground thyme
2 tsp of Garlic powder
2-3 yellow onions, diced
3 tbs of butter or oil
1 tbs of tomato paste
1/2 cup of chicken broth
3 tbs Worcestershire sauce
2 tsp of Salt
1 tsp of Pepper
1 tsp of Dry thyme
For Topping:
3/4- 1 cup of ketchup
1-2 tbs of brown sugar (depending on your desired sweetness)
1 tsp of Worcestershire sauce
1 tsp Garlic powder
Pinch of salt
RECIPE NOTES:
- DO NOT over mix! Mix just until ingredients are combined. Over-mixing yields a dry meatloaf.
- Bake in a 325 degree oven for 1 hour and 25 minutes.
- Fill a small cake pan with hot water and place it on the rack below your pan of meatloaf while it bakes. This will help to keep the meatloaf and sauce from cracking on top as it cooks.
