ATTENTION: The recipe Yiayia uses is posted below but Yiayia herself DOES NOT follow it.
1.5 cups white rice
1/2 teaspoon salt
4 cups milk
1 packet Greek vanilla or 1 tsp vanilla extract
2 cups sugar
Cinnamon for garnish to taste
Rinse rice while you bring just enough water to cover rice to a boil in a pot
Cook down rice and water with 1/2 teaspoon salt until water is mostly evaporated about 15 minutes
Add 4 cups of milk, vanilla, and 2 cups sugar and stir to combine and cook for an additional 30-40 minutes until rice is tender
Transfer mixture into serving tray or individual bowls and let cool at room temperature
Garnish with cinnamon to your preference an enjoy at room temperature or chilled
