(Dudhi) is a staple vegetable in most Indian homes because of its many known health benefits. The vegetable itself is rather bland, so I love manipulating its flavour.
Bottle gourd has always been one of the healthiest vegetable.This vegetable is full of water about 92% and has minerals to keep your body hydrated. It helps in weight loss, cools your body, helps in digestion, helps in treating sleeping disorders.
I make this sabji quite often during the summer months, as it has a lot of water content, easy on the stomach also. I use minimum spices.to cook this. I cook it in a pressure cooker as it gets done in one go. As mornings are busy rush hours, with tiffins and lunch boxes to be packed. Goes well with roties, parathas as well as rice.
List of Ingredients
250 grams Bottle Gourd
5-7 crushed garlic
3-4 green chillies
Few curry leaves
1 small tomato
1 tbsp oil
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1/2 tsp asafoetida (Hing)
Salt as per taste
Chopped coriander leaves
1/2 tsp numeric powder
2 tbsp fresh grated coconut
