Siningang | Tamarind Soup with Pork and Vegetables | Pork Neck and Kale
Sinigang is a sour soup with protein and vegetables. Protein can be pork, beef, shrimp or fish. Tamarind is the most commonly use as souring agent. The most convenient to use is " sinigang" mix/ "sinigang" powder. You can use fresh tamarind if it is available.
This is probably the first dish I learned to cook, since I was 9 years old. It is very easy to make. There are different ways to make it, some people saute it, some people boil it.
In this recipe I used pork neck for rich flavorfull broth, if you don't like bones, you can use pork shoulder, pork belly or pork butt, and also, I'm not a fan of eggplant and taro in sinigang, most people add taro to make the soup thick. Usually, it's "kangkong" water spinach, for the leaves, but since it is not available here in Canada, I always use kale.
It is best eaten with rice and fish sauce as dipping sauce.

Ingredients
-1 kilo pork neck
-1/2 medium onion, cut into wedges
-10 long string beans, cut into 2- inch length
-2 stalks kale, stems removed
-1/4 pc daikon radish, peeled and sliced
-10 medium okra, cut into half
-2 tomatoes cut into wedges
-1 pack tamarind soup base/sinigang mix
- 3 green long peppers
-1 tablespoon fish sauce
