GLUTEN FREE VERSION
INGREDIENTS
- 112g almond flour (Amazon: [ Ссылка ])
- 10g xanthan gum (Amazon: [ Ссылка ])
- 2g baking powder
- 2g salt (Amazon: [ Ссылка ])
- 15ml / 3 tsp water
- 1 egg
GLUTEN VERSION
INGREDIENTS
- 100g almond flour (Amazon: [ Ссылка ])
- 14g wheat gluten (Amazon: [ Ссылка ])
- 9g xanthan gum (Amazon://amzn.to/3bgM9Sr)
- 2g baking powder
- 2g salt (Amazon: [ Ссылка ])
- 15ml / 3 tsp water
- 1 egg
HARDWARE
- Tortilla Press (Amazon: [ Ссылка ])
DIRECTIONS
1. Combine the dry ingredients in a bowl and mix until evenly distributed.
2. In a large bowl, whisk together the egg and the water.
3. Add the dry ingredients into the wet and mix. Once you have a ball, knead it for a bit until it is consistent and the ingredients in the dough looks evenly distributed.
4. Let the dough rest for at least 15 minutes.
5. Roll out the dough between sheets or parchment paper or use a tortilla press. If you use a tortilla press, make sure to press the tortilla at all four 90 degree angles to ensure an even tortilla.
6. Over a very hot cast iron skillet/griddle or a nonstick pan, lay the tortilla flat away from you. Cook on this side for 40-60 seconds (this will depend on how hot the pan is). The dough will start to change colors from a tan to white. When the top is mostly white spots, flip it.
7. If making the gluten-free version, only cook for 5 seconds or it will not be pliable. If you are making the gluten version, cook for 5-10 seconds (the gluten allows more variability).
8. Remove the tortillas and eat warm, or cover with a warm moist towel is you are making a bunch!
