Today's recipe is a simple Egg Burji Paratha which you can make very quickly and pack for your lunch. Kids would also enjoy this. You can have the paratha as is without any side dish.

Ingredients

To make the Dough
Wheat Flour - 2 cups
Salt - 1/4 tsp
Oil - 1 tsp
Water - as required


To make the stuffing
Eggs - 3
Chopped Onion - 1 big
Green Chilli - 2
Curry Leaves - 2 sticks
Oil - 2 to 3 tbsp
Salt - 1/4 tsp
Tumeric powder - 1/4 tsp
Mustard seeds - 1/4 tsp

Ghee for cooking the paratha


Preparation
To make the dough, combne together the wheat flour, salt and oil and mix well.
Add water and make a smooth dough and set aside.
To make the stuffing, heat oil in a pan.
Add mustard seeds and wait until it splutters.
Add chopped onion and green chilli.
If you are making it for kids, use black pepper powder instead of green chilli.
Add curry leaves.
Add salt and saute until onion turns slightly brown.
Add turmeric powder and saute until the raw smell is gone.
Add in the eggs and scramble it with the help of a wooden spatula until the eggs get cooked.
The stuffing is ready. Allow it to cool down before making the paratha.
To make the paratha, take small portions of the dough. Roll it between your palms and flatten with the help of a rolling pin.
Place some egg stuffing in the middle.
Bring together the edges of the roti and seal the stuffing and flatten it up.
Use the rolling pin again to roll the paratha.
Make all the parathas in this way.
Heat a tawa and cook the paratha on both the sides until it gets cooked.
You can apply some ghee on both the sides and cook for some more time.
Egg Burji Paratha is ready to be served.
