If you need a recipe for lamb meat don't look further and give this traditional Albanian dish a go! The lamb shoulder is baked in a casserole dish with rice, yogurt, eggs and roux (flour and butter). The is a very comforting dish with super tender meat.

INGREDIENTS
For the lamb:
- lamb shoulder [12 oz / 350 g]
- butter [1 tbsp / 10 g]
- olive oil [1 tbsp / 15 ml]
- garlic [1 big clove]
- dried oregano [half teaspoon]
- rice [1 oz / 30 g]
- hot water [200ml for lamb + 60 ml for rice]
- salt and pepper to taste
For the yogurt mixture:
- 2 eggs
- Greek yogurt [1 cup / 250 g]
- butter [1-2 tbsp / 20g]
- all purpose wheat flour [2 tbsp / 20 g]
- salt & pepper to taste
- pinch of ground nutmeg
