This is part two of my pâté series, duck pâté! I am not sure if this technically is classified as a pâté, it's more like a pressed rillet but I wold like to think so!
To make it a little unique, I paired it with some nice kumquats I've found in farmer's market. As most of you probably know, orange and duck is a classic pairing and I just thought, why not pair kumquats with it! They are kind of similar, right?!
Anyway, result was great! It was tasty and because I haven't used any offal, I would say this is much beginner friendly pâté. Even if you don't normally enjoy pâté, this one is worth a go!

1/2 cup kosher salt
2 bay leaves, broken into pieces
2 tablesp. Chopped thyme
1/4 cup Packed Italian parsley leaves
1 teasp. black peppercorns
