Having owned many custom shop and non-custom shop Les Paul Customs and a handful of 1968 and 1957 reissue LPCs, I can tell you that there is a distinct different in feel between the two. I believe a lot of this comes from the neck profiles varying, but I think there is also a difference in the quality of woods used.
A 'regular' Les Paul Custom has a short neck tenon and a Nashville styled bridge. Maple top, mahogany back and neck.
A '57 and '68 Reissue has a Long Neck Tenon, Historic spec plastics, and an ABR-1 Bridge. These are also solid bodied guitars without weight relief. The bodies and necks are mahogany - the '68 RI has a maple top, and the '57 reissue has a mahogany top.
It is hard to describe the feel difference, but '68 and '57 RI LPCs just always felt a step above the rest. Used prices between a regular and reissue custom are not too different - generally a $500 premium or so (depending on finish and condition.) A regular custom isn't a bad guitar either! In fact, if you hate large neck profiles, you won't want one!
