We’ve compiled a guide with recipes to help your body detox, like this beet salad. And make sure to save those beet greens! They have tons of nutrients and taste great sautéed or blended in your morning smoothie.
Roasted Beet Salad with Pistachios
1 garlic clove, minced
4 Tbsp olive oil
2 Tbsp apple cider vinegar
1/2 tsp salt
1⁄4 tsp pepper (or to taste)
2 c. red or golden beets, cooked and diced
1⁄4 small red onion, very finely sliced
1⁄2 c. feta, crumbled (omit for dairy-free)
1⁄4 c. pistachios (can sub walnuts or sliced
almonds)
Juice and zest of one orange (optional)
1 c. chopped parsley or mint (optional)
Put all dressing ingredients into a small jar with a lid and shake, or place ingredients directly into the salad bowl and whisk to combine.
Add the salad ingredients (with optional items, if using) and toss.
This salad will keep in the fridge for 3 days.
