Seco de Carne is a famous Peruvian Beef Stew flavored mainly with cilantro. It's funny how it got its name because "Seco" means dry, and this dish is anything but that! Seco de Carne has Arab influences that were probably brought over to Peru by African slaves. The recipe varies depending on the region of Peru, the one constant being that this stew uses a cilantro puree as the main flavor base. Some people hear the word cilantro and start running for the hills, like Andrew Rea @Babish Culinary Universe However, including the cilantro puree makes this broth spectacular, even for the staunchest of cilantro critics! Seco de Carne is the BEST BEEF STEW you'll ever have! Yea, I said it! LOL Make it Sabroso!
