Im so excited to share this recipe with you all today! Its a special video, as this is for my daughters 1st birthday. I wanted to give her a tasty cake, but also something that would be good for her digestion and made by me as I love baking so much.
You can enjoy this cake at any time, and doesnt need to be for a birthday! In fact, this cake is so delicious and easy to make, that I will be making it again for us to enjoy as a family.
Here are the ingredients below:
Set oven to 170C - bake for 50 mins
Cake:
6 Dates
3-4 Bananas
½ Cup Raspberries
6 Eggs
60ml Coconut Oil
45g Coconut Flour
1/2 teaspoon cinnamon
1 ½ tsp Baking Powder
Jam:
1 cup Frozen Raspberries, defrosted
1 tbsp Chia Seeds
1 tbsp Warm Water
P:S: please note that I do say this is diary free, but as i have used lactose free mascopone cheese, it would make this actually diary! So to make it diary free, you are absolutely welcome to use coconut cream.
