If you’re looking for bar recommendations for Tokyo, who better to ask than Rogerio Igarashi Vaz?
In this second episode of Nikka City Shakedown, the co-founder of Bar Trench, No.43 in Asia’s 50 Best Bars 2021, takes us on a tour of his favourite area to grab a cocktail in Tokyo.
Picking up a Japanese lemon along the way, we then head to Bar Trench to create this delicious Sazerac:
Ingredients:
50ml Nikka From The Barrel
2 bar spoons of Acacia Honey
4 dashes of Bitters
6 dashes of absinthe
Method:
Coat the glass with absinthe and let it chill in the fridge
Pour all ingredients into a mixing glass and stir until chilled
Pour the chilled mixture into the absinthe coated glass
Garnish with the Japanese lemon peel on the rim of the glass
