The aroma of garlic and herbs fill the house and make your mouth water. Who would think the simple green bean could be the hero vegetable on the dinner table.Make as either a side dish or serve as a main this dish is sure to please.
You can make the beans a little softer if you boil them for a few minutes before adding to the other ingredients, but I think they taste better with a bit of texture left in them.
OVEN ROASTED GREEN BEANS WITH GARLIC AND PARMESAN
400 g fresh green beans
1/4 cup olive oil
1/2 tsp dried rosemary
1/2 tsp dried thyme
6 cloves of garlic sliced
30 g Parmesan cheese
pinch of salt
cracked pepper to taste
Preheat oven 200 C 400 F
Wash green beans and remove any stems
Place all ingredients into a bowl and mix well
Spread in a single layer onto a backing sheet sprayed with oil and top with any Parmesan and garlic that has remained in the mixing bowl
Bake for 15 - 20 minutes, until aromatic and cheese has browned.
Serve hot
