I wanted to make a dedicated video for this bread because it is so easy. Because it's SO EASY we have it a lot!! You can double this recipe or make it ahead and keep the dough in the frig until you're ready to use it. I think it tastes even better after the dough sets in the frig for a few days. Recipe follows.
Dutch Oven Bread
1 1/2 cups warm water
1 packet yeast (any packet will do. This recipe doesn't care) or 2 1/4 t. of bulk-buy yeast
1/2 Tablespoon of salt (I posted that info wrong on the video AND I said it wrong in the video LOL!
1Tablespoon sugar (opt) yeast loves sugar and this helps the yeast bloom
As mentioned in the video, I add 1-2 Tablespoons of potato flakes. This is optional. If you don't have them laying around, don't use them. It only helps the yeast in the same way that sugar does.
3 1/4 cups all-purpose flour or bread flour
In a large bowl, mix the warm water, yeast, salt, and sugar; if using. Also add the potato flakes, if using.
Stir until the yeast is dissolved. I let mine sit for about 5 minutes for the yeast to start working (bloom). You do not have to let your's sit.
Add in the flour all at once and mix. The dough will be sticky and shaggy (it doesn't look smooth)
Cover and let rise in warm place for 2-3 hours. After 2-3 hours you can bake or store in refrigerator up to 7 days. The longer you leave it in the frig, the more it tastes like sourdough.
If baking, Put your Dutch oven in the oven, with the lid on, and preheat to 450º. When oven reaches a 450º leave Dutch oven in the oven for another 20 minutes. You want that pot good and hot!
When Dutch oven is ready, scrape the dough from the bowl onto a floured piece of parchment paper.
Shape into a round or loaf shape. You can score the top of the bread dough with a sharp serrated knife or razor blade, if desired. I usually don't.
Place dough and parchment paper into hot Dutch oven and bake at 450º for 35 minutes.
Remove lid and continue to bake for another 5-10 minutes until a golden brown. I don't always have to do this step. Mine is pretty brown after 35 minutes.
Remove from Dutch oven and let sit 10 minutes before slicing.
