Today we are making this delicious Lemon Raspberry Loaf Cake! Perfect Spring & Summer cake! It requires very minimal effort and time. We are making this recipe easy, by using a boxed cake mix. This loaf cake is very moist & full of flavour. Make it right away! You’re going to love this!

Ingredients List:

Cake:

I box lemon cake mix

1 box instant lemon pudding

4 large eggs

3/4 cup buttermilk

1/4 cup freshly squeezed lemon juice

1/4 cup milk

1/3 cup melted butter

1 teaspoon vanilla extract

1 cup fresh raspberries (rinsed and dried)


Icing:

2-1/2 cups powdered sugar

4-5 tablespoons freshly squeezed lemon juice
