Now you can make Puto with brown rice and simply bake them right away without fermentation. This is gluten-free and very high in fiber.

HEALTHY PUTO (Filipino Rice Cake)

1 ¾ c brown rice flour
¼ c turbinado sugar
1 tsp stevia
1 T aluminum-free baking powder
¼ tsp sea salt
1 (13.5 oz) can coconut milk
24 small cupcake liners

Preheat oven at 350 degrees. Put cupcake liners in a mini muffin tin. Spray oil in each cupcake liner. Set it aside. Mix all ingredients in a mixing bowl. Fill up each cupcake liner with the mixture. Bake for 20 minutes. Delicious!
