Spanish Bread is popular "merienda" in the Philippines with a (not so sweet) buttery filling!
Ingredients:
Dough
2 1/4 tsp Active dry yeast
1 tsp Sugar
1/2 cup Lukewarm water
3 cups Bread flour
1 cup All-purpose flour
1/2 cup Sugar
3/4 tsp Salt
3/4 cup Lukewarm Milk (Evaporated or Whole Fresh Milk)
3 Large Egg yolks
1/2 cup Softened pure butter
Oil for the bowl
Butter Filling
1/2 cup Softened butter
1/2 cup Bread crumbs (use 3/4 cup if you prefer not to use desiccated coconut)
1/4 cup Desiccated coconut (optional)
1/2 cup Brown sugar
3 tsp Milk
1 tsp Vanilla extract
Bake in the preheated oven at 180C for 15-20mins/ until light brown top.
Please use stand mixer if available
Knead until smooth, always check for the windowpane test
