Ghotab or Qottab is a traditional Iranian almond and walnut-filled crescent pastry that is infused with cardamom flavors to make the perfect taste. It is one of the delicious pastries from Yazd-Iran.
When the yogurt is at room temperature, add the egg yolks, butter and baking powder and mix the ingredients well. Finally, add the flour to the dough until a soft dough is obtained. Then leave the dough in a cool place for two hours.
In the meantime, prepare the middle materials of the Ghottab. After our rest, open the dough with the help of a rolling pin and mold it.
Combine the almonds and sifted powdered sugar with the ground cardamom, and rose water in a relatively flat bowl to make a smooth paste. If you wish, you can also use walnut powder and cinnamon, depending on your taste.
Ingredients:
1- Unsalted butter 110g
2- Egg yolks 2
3- Yogurt/sour_cream 110g
4- Baking powder 1/2tsp
5- Flour 200g
Filling ingredients for Ghottab:
1- Almond powder 180g
2- Icing sugar 150g
3- Ground cardamom 1tsp/tbsp (as desired)
4- Rose water 1/3-1/2 cup
