Ingredients
Crust
2 cups all-purpose flour (250g)
4 teaspoons granulated sugar
½ teaspoon salt
12 Tablespoons unsalted butter, very cold and cut into pieces.
½ cup full-fat sour cream (120g)
Berry or peach filling (note, this recipe makes enough crust for you to make either the berry/peach filling OR the apple pie filling. If you intend to make both you will need to double the crust (or halve each of the filling recipes)
⅓ cup granulated sugar (66g)
2 Tablespoons cornstarch
8 oz fresh or frozen berries or peeled, pitted, diced peaches (226g)
2 Tablespoons water
1 Tablespoon lemon juice
1 Tablespoon unsalted butter
Apple pie filling (note, this recipe makes enough crust for you to make either the berry/peach filling OR the apple pie filling. If you intend to make both you will need to double the crust (or halve each of the filling recipes)
8 oz peeled, cored apples that have been diced into very small pieces (½” or smaller). (weigh after peeling and coring). This is about 2 medium-sized apples. (226g)
⅓ cup light brown sugar, firmly packed (65g)
2 Tablespoons unsalted butter (42g)
2 teaspoons cornstarch
½ teaspoon ground cinnamon
⅛ teaspoon salt
½ teaspoon vanilla extract
For Assembly
1 large egg
1 teaspoon water
Coarse or granulated sugar for sprinkling (optional)
Glaze (optional, alternatively sprinkle with granulated sugar before baking or dust with powdered sugar before serving).
1 cup powdered sugar (125g)
1 Tablespoon milk
½ teaspoon vanilla extract
