Forging & Heat Treat
In this video I forge out an 8” chef knife from 80CrV2 steel. I ran normalization cycles at 1650F, 1500F, and 1400F, each with a 10 minute soak, before quenching in Parks AAA medium-fast quench oil. I heat the quench oil to ~120F using a portable propane torch, and I heat the blade to 1525F with a 10 minute soak before quenching in the oil. After quenching I ran two tempering cycles at 400F for 2 hours each. This resulted in a final Rockwell hardness of between 61Rc - 64Rc.

Handle
I shape and finish the handle on an 8” chef knife I forged from 80CrV2 steel. The handle scales are maple burl with blue-green epoxy, and have (6) 3mm stainless steel pins. I sanded the handle to 600 grit, and then polished it on a buffing wheel with rouge. I finished the handle with 3 coats of Odie's Oil, each applied 12-18 hours apart.

Sharpening
In this video I sharpen an 8” chef knife on a set of diamond stones by Ultra Sharp. I progress through a 300 grit, 1200 grit, and 3000 grit stone. After sharpening on the stones, I polish the edge with a double sided leather strop. I use 5 micron diamond paste on one side, and 3.5 micron diamond paste on the other.
