Here is a great and light way to serve a simple and delicious chicken taco. I like to serve these tasty chicken tacos with a side salad for a healthier and lighter Taco Tuesday meal. I also include an easy Lime vinaigrette recipe that compliments this meal wonderfully.
INGREDIENTS
1 1/2 pounds boneless skinless chicken breast
1 tsp garlic powder
1/2 tsp paprika
1 tsp onion powder
1/2 tsp salt
pepper to taste
Juice of a lime
2 to 3 cups sliced bell peppers (optional)
medium to large onion sliced (optional)
LIME DRESSING
Juice of a lime (3 to 4 tbls)
1 tsp honey
salt and pepper to taste
1 tsp of Dijon mustard
2 tbls Avocado oil (or oil of your choice)
