Chicken adobo was one of my favorite cheap eats during college from a small Asian restaurant near my campus. The Filipino chicken dish came with a quartered leg cooked in sweet, sour, soy sauce over rice. It used to cost me $3.25. It was back in the early 2000's. Years later, when I learned the recipe, I realized how easy it was. I do cook chicken quite a bit on weeknights because they are easy. Sometimes, I even throw them in the oven with seasonings and nothing else because I don't have time. When I do have a little bit of time, I marinate them in some sweet soy concoction overnight. Little did I know that if I add white vinegar to whatever I was doing already, it would've been chicken adobo marinade. Instead of baking, I would then be simmering the chicken in the pot for 30 minutes. If you are a busy person or a beginner home cook, you really must try this Filipino chicken adobo.
Ingredients:
3 lbs Chicken thigh or drumsticks or quarters
Marinade:
5 minced garlic cloves
½ cup soy sauce
½ cup white vinegar
4 bay leaves
Cooking:
2 tbsp cooking oil
4 minced garlic cloves
1 diced onion
old marinade
1 1/2 cup water
4 tbsp brown sugar
1 tsp black pepper corn
green onion
