- 1 cup Ricotta Cheese
- ½ cup Blueberries
- ¼ cup All-purpose Flour
- 2 tablespoons Butter
- 2 Eggs
- ¼ cup Milk
- 1 tablespoon Olive Oil
- 1 teaspoon Baking Powder
- ¼ teaspoon Salt
- 2 tablespoons Sugar
Directions To Make Gordon Ramsay Ricotta & Blueberry Pancakes-
1. Sift in all-purpose flour, baking powder, salt and sugar in a bowl and mix until combined.
2. Create a wet area in the center. Separate two eggs and add the yolks.
3. Beat the yolks into the flour, pouring the milk gradually to form a smooth batter.
4. Now fold in creamy ricotta cheese and half a cup of blueberries.
5. With egg whites, whisk until they reach soft peaks.
6. Heat a nonstick saucepan over low-medium heat, grease it with olive oil and a small amount of butter, and spoon the batter onto the pan.
7. Fry until golden and set on the underside; gently flip and cook the other side until browned and cooked through.
8. Serve with extra blueberries and Greek Yoghurt, and drizzle honey over the pancake.
