In this video, I show you how we do portion control for our powder mixes behind our bar. It’s always good to have procedures like this so no matter who’s working it’s super easy to train and it’s always gonna give you a consistent product on the end, ultimately given your customer consistency, no matter who’s working and when they come in. Workflow speeds of exponentially when nobody has to stop and scoop and put away powder mixes. Just grab a soufflé and throw it in the cup and move on .For us we try to portion two times a week, always keeping our level stocked and it works for us.
