This recipe can be used on any colored bell pepper and you can adjust the sodium to your preference. Peppers- Bell p 115

Ingredients:
Yield about 12 half pints or 6 Pints
6 pounds Bell peppers, green, yellow or red
Vinegar, 5% acidity
Water

Directions:
wash peppers, remove seeds and cut peppers lengthwise into quarters. Cover peppers in a sucepan with water and bring to a boil. Reduce to a gentle boil and boil 3 minutes. Fill hot peppers into a hot jar leaving 1 inch headspace. Add 1/4 tsp salt and 1 1/2 tsp vinegar to half pint jars. 1/2 tsp salt and 1 tbsp vinegar to pint jars. Process Half pints and Pint jars 35 minutes in a pressure canner, adjusting for the correct altitude. Turn off heat, cool canner to zero pressure. after 5 minutes remove the lid, let jars cool 10 minutes. remove from the Canner, do not retighten hands if loose. cool 12 hours. Check seals.
Label and store jars.
