Ingredients·
Egg-4 or 6·
Onion-4 ·
Ginger- 1 inch piece·
Garlic-4-5cloves ·
Green chilies-2·
Fennel seeds-1/4tsp ·
Pepper-1/2tsp ·
Curry leaves – 1 or 2 string·
Chilli Powder-1tsp ·
Coriander Powder-2tsp ·
Garam Masala/ Chicken Masala-1/2tsp ·
Coconut Oil to fry ·
Tomato-1 ·
Salt- to taste
Instructions·
Crush the ginger, garlic, black pepper &fennel seeds. Ensure the pepper and fennel seeds are crushed properly.·
In a pan heat coconut oil and fry the crushedmix, until aromatic and soft. Add curry leaves & green chillies and salute itagain.·
Add the thinly sliced onions to it and enoughsalt. Fry it till golden-brown.·
Meanwhile boil the eggs and keep them ready.·
Once the onions are browned add in the tomato, Cover and cook till the tomato softens, (At this stage you can optionally add 1 tbsp of tomato ketchup and soya sauce, it enhances the flavour) and fry till raw smell goes away.·
Add in boiled water and eggs, let it cook and get dry.·
Roast it for a few more minutes until everythingis well combined and roasted properly.·
Enjoy with Appam, Dosa, Idiyappams, ghee rice, Neer dosa, it goes well with anything.
