This is a fresh and savory bowl filled with delicious flavorful foods. It comes together quickly so it is a must try!
🌱Ingredients:
(Serves 2)
-2 cups cooked quinoa
-2 eggs
-4 slices of bacon
-3 mushrooms, thinly sliced
-1/2 red pepper, diced
-1/2 tomato, diced
-3 tbsps goat cheese
-3 tbsp fresh parsley
-3 tbsp microgreens
-1 tbsp sunflower oil
-Chili powder
-Salt + Pepper
Sauce:
-2 tbsp olive oil
-1/2 tbsp sriracha
-1/4 tbsp lemon juice
-Dash of garlic powder
-Dash of red chili flakes
🌱Directions:
-Cook quinoa per package directions.
-Make sauce. Add all ingredients to a small dish and whisk until well combined. Set aside.
-In a pan on medium heat, cook your bacon. 2-4 minutes on each side, flipping throughout. Set aside.
-In a pan on medium heat add sunflower oil. Add mushrooms, red pepper, dash of chili powder, salt and pepper. Stir occasionally for 4-5 minutes.
-Make over easy eggs. Heat a pan on medium heat for about 1 minute. Spray cooking spray and crack eggs over pan. Let egg cook for 1-2 minutes. Once egg whites are firm, flip and cook for less than 30 seconds. Top with salt and pepper.
-Assemble bowls, split ingredients evenly between two dishes. Start your base with quinoa. Add mushrooms, red peppers, tomatoes, bacon, goat cheese, egg, parsley and microgreens. Whisk sauce once more and top bowls. Enjoy!!
