Koose/Akara is a traditionally deep-fried West African breakfast food made with black-eyed peas (beans), chillis and other spices. We added a healthier twist to this breakfast food by baking instead. We hope you enjoy this recipe!
Ingredients for 8-10 muffins:
350g raw black-eyed peas
1 red onion
2 spring onions
1 or 2 scotch bonnet/red chillis
Salt to taste
Tiny splash of water for blending
Coconut or other oil
(Flour just in case you add too much water and the mixture is thin)
You will also need a muffin tray!
