Ingredients:
• 300 grams mushrooms
• 1 carrot
• 1 red onion
• 1 clove garlic
• 1 grated tomato
• 1 celery stalk
• 1 tablespoon mixed tomato paste (medium spicy)
• 5 basil leaves
• Half a cup vegetable broth
• Pasta cooking water (to adjust consistency)
• Salt and black pepper
• Tofu cheese (optional)

Instructions:
Sauté the onion, carrot, celery stalk, and grated tomato in a pan for about 2-3 minutes until the vegetables are tender but still firm. Then add the mushrooms, vegetable broth, and basil, and season to taste. Add the cooked pasta and adjust the consistency with pasta cooking water if needed. Finally, stir in the tofu cheese and remove from heat. Serve with sliced mushrooms, olive oil, and some additional tofu cheese if desired. It’s important not to overcook the vegetables in the sauce.
